The star of this month is British asparagus – freshness is all, so if you can buy it direct from the grower so much the better. New potatoes should have come down in price and the first baby broad beans will be ready before the end of the month. Rocket is one of the first salad leaves to be picked and it will quickly be joined by others. Our rivers, although now very depleted, can still provide a rare treat. Sea Trout, although expensive, would make the perfect meal. Many have always considered it superior to Salmon and now that wild Salmon is so rare, Sea Trout has certainly taken the crown. In the wild, St George’s mushrooms might still be around at the start of the month and the widely available Elderflower at the end.
